Butcher block looks great but struggles in South Florida humidity. I've seen cutting-board style countertops develop mold underneath within months.

Mid-range remodels run four to six weeks. You'll need an alternative cooking setup for part of that time. A lot of my clients set up a temporary kitchen in the garage or dining room with a microwave and hot plate.
